This is from an interview with a professor at a industrial design school specializing in the food industry. His students were invited to present their ideas at an industry trade show and he's discussing how they will present their them. I understand the literal meaning of the words, but wonder if there's some figurative sense I'm missing and if not, how they're relevant to the subject. Same goes for "transformation d'association." Here's the context:
En 2008 les projets proposés s’articulent autour de 2 thèmes choisis : les Produits Laitiers et l’Épicerie Fine.
La présentation des travaux se fait dans deux espaces dédiés distincts afin d’être au cœur des filières Produits Laitiers : virginité, genèse, blancheur, toucher, histoire du bout du monde, histoire de transformation d’association, histoires à mettre dans la poche dans le congélateur, entre toutes les mains... du bébé à l’âge canonique.

I'd say these are just some fancy names for new culinary creations ("of the baby of the veneral age" doesn't seem to fit in either, but...)

NOT traceability or record of where it came from, but info about the area that it comes from (geography, culture, etc.). It could also be "spiel about its origins", for the use of "histoires" in the next bit seems to impart a slightly derogatory tone ("the stuff to put on the freezer or refrigeration pouches"). HTH

I thought "end of the world" had a fatalistic ring to it in English, i.e. in the sense of "doom"...
doesn't "bout du monde" have another meaning here?
Ayant lui-même travaillé dans les chantiers de construction de chemins de fer dans le nord ouest canadien, Trevor Ferguson nous fait sentir les odeurs du bout du monde, la sueur, le travail et la terre.
