bisteces de res cortados en cuadritos pequeños

This isn't my field, and I'm not certain if this should be "finely cubed steak," "steak cut in small cubes," or if it really means "cube steak" (which is an inferior cut of meat, isn't it?). Help, please! I'm really out of my element here!

That was my doubt, too... Yes, this is from Mexico, and I do think of bistec as a thin slice of meat. On the other hand, this is a recipe book for a wealthy crowd, and so my sense is that it might really mean sirloin steak. However ... it also gets marinated overnight, and then fried, and then covered with beans and bean broth, so if it were an "inferior" cut of meat, it might not matter...

Where is the recipe from? In Mexico, for example, bisteces are thinly sliced meat, not at all like what Americans would understand by a steak.

your own answers are good

I really think that your own suggestions are best, i.e. "(beef) steak cut in small cubes"......In my opinion "finely" is too much, and finely diced is really little. Chopped also implies awfully small. I think that small cubes must be about the size of (what else?) dice.

I don´t think they are talking aboud "cube steak" either. This is real steak, just jcut in cubes.
