This isn't my field, and I'm not certain if this should be "finely cubed steak," "steak cut in small cubes," or if it really means "cube steak" (which is an inferior cut of meat, isn't it?). Help, please! I'm really out of my element here!

your own answers are good
I really think that your own suggestions are best, i.e. "(beef) steak cut in small cubes"......In my opinion "finely" is too much, and finely diced is really little. Chopped also implies awfully small. I think that small cubes must be about the size of (what else?) dice.

Comment: "Ronnie: Thanks for your help. I appreciated everybody's answers, but I had a picture and now I've checked with the client, and it is indeed beef (not steak) cut into fairly thick cubes."

: diced, exactly / it might be a good idea to include the word "beef" (even though "steak" is often understood as, or assumed to be, beef.
