I need the diminutive form.
small potato peels (as a side dish)
I see the word "peelets" in many places on the Internet. But does it exist?

bite-sized baked potato peels
Since they are baked, they can't be fries. So using the adjective bite-sized makes this a descriptive menu entry. I would, however, add first another adjective such as 'tasty' to counteract the idea of eating potato peels for those who haven't done so previously- : )
Note from asker:
well, let's make it clear, they are exotic also for Poles - the aim is to "make a trip into history when simple Polish villagers had traditional dishes"; and these peelings will be available in a chic restaurant with lots of French and Italian-sounding dishes. All that to provide an alternative to fast foods. |

shredded peel
Not sure if this is what you are looking for, but it certainly fits the picture you provided

I'm simply helping the Asker to come up with appropriate words. From the pictures provided, I would say that we are looking at "shredded potato peel fries" or something to that effect

: I agree with shreds. Gets over the idea of the small size nicely. Would favour skin though, instead of peel.// Just have this image of potato peel shavings sitting in my garbage pot ;-)

Thanks. I would agree except that diners would expect potato skins to contain a fair bit of flesh // Me too - I don't mind translating them but I wouldn't eat them! ;-)

mini potato skins
I'm not sure that peel is what you're looking for. There is a side dish that consists of deep fried potato skins though - perhaps this is what you mean? They are hollowed out potatoes, in your case maybe cut into strips or small pieces - hence the mini, or even bitesize?

In light of your additional context, the following suggestions are other options that you may wish to consider:
Potato skin flakes
Potato skin shreds
Potato skin frazzles
Skin and peel are theoretically the same thing on a potato, although seeing potato peel on a menu would definitely turn me off! IMO, peel or peelings tend to be associated with waste that is destined for the garbage, whereas skin sounds much more appetising ;-)

stir-fried potato shreds
a northern chinese dish, originally (i think) with green chillis. i used red chillies, rice vinegar, light soy sauce and spring onions. not the best photo. i just wanted to EAT!

when I was a fat kid my family would always go to this restaurant the next town over. The place had a signature dish called "frazzles". Frazzles were deep fried russet potato skins sliced semi thick and coated with layers of parmesan cheese. Each basket of frazzles were served with an extra creamy ranch dipping sauce...it was possibly the best snack I've ever tasted.

: Yes. Just because one peels potatoes that doesn't turn their skins into peel! ;)

literally "small potato peels/peelings"
Proof from a menu:
"baked potato peels", used like chips in Poland, and at the same price
