In cookery "glaze" usually means stock that has cooked down to make a thin sauce, in this context it means the water (or other substance) that was romoved from the shrimps, perhaps after thawing. On cans of shrimps they often give the brutto weight (everything in the can) and the netto (only the actually shrimps after the water has been drained away).
