Is this sentence grammaticaly correct:
More and more people are talking about and understanding the meaning and the role that beauty olays in modeling.
I mean is it ok to use the present continuous or is it better to use simple present?

present continuous
This is correct usage, particularly with the "more and more" intensifyer.
Apart from the normal uses of the present continuous there is the "affective" use whic h means it adds an extra slant to the utterance, such as expressing annoyance or some other emotion.

Yes it's grammatically correct, the present continuous is fine. But it does sound a bit awkward. I would separate 'and understanding' off with commas, or even with em dashes. The sentence has a lot of 'and' phrases, doesn't read terribly well.
