I'm trying to make sense of this. Does it mean variables that include totals of more than one value?

Los valores extremos (outliers) son números poco comunes para determinada variable, que no significa que sean errores, sino que son casos que deben ser revisados para confirmar un posible error o validar el dato extremo. Por ejemplo, en la variable de edad se pueden encontrar valores extremos de edades de más de 99 años. Obviamente, no significa que no existan personas de más de esta edad, pero sin dudas son casos que deben revisarse y validarse por posibles errores en la captura de datos. Otro ejemplo son **las variables que contienen montos**. Existen técnicas estadísticas para determinar la ocurrencia de valores extremos en determinadas variables. La pregunta se refiere a si se aplica algún tipo de control para detectar los valores extremos (outliers), si corresponde.

Essentially this is "sums", but I wouldn't be inclined to use that term. Sums (and averages) typically behave in a less extreme way than individual observations and hence are less associated with outliers. "aggregated data" though can have issues arising from the aggregation process used.

I suspect the term is actually areal data but you'd need to check that with your client (as it stands, it'd be overtranslation). See e.g. "Detecting global clustering patterns and outliers with areal data" .

"The key difference between areal data and continuous data is basically in terms of the form of the data itself. While continuous data involves point samples from a continuous spatial distribution (such as temperature readings at various point locations), areal data involves aggregated quantities for each areal unit within some relevant spatial partition of a given region (such as census tracts within a city, or counties within a state)."

basically as far as I can tell yes, you are right.

I can't find any special statistical or mathematical meaning for "monto(s)" and it usually just means amount or sum

but I guess it means when a variable has more than 1 sum, presumably made up of 2 or more interior parts, that it is something that should be checked for accuracy

I see additional context in your current question regarding Spanish term "variables claves de identificación unívoca de casos" which includes de term "montos":
"...No son claves de identificación (claves primarias) aquellas variables que contengan montos o importes, edades o fechas", so, "monto" and "importe" is the same thing. I would suggest you review your translation.
