3 pairs in EN-FR-TR, all pairs included; sometimes also called "a six pack" J
as my colleagues say, depends on how you look at it.
but clients usually prefer -for obvious reasons- the one(s) you're native in.
They do not know what they're missing J

From 2 source languages into my 2 native languages, but on average 70% of my total work is in one language combination. | | | |
English, French, Italian and Spanish to my native language: European Portuguese, but the vast majority of my work is in one combination (EN-PT). | | | |

But 80% of my work is in one and more than 19% is in another, so I really only work in two combinations with occasional work in the third. | | | |

Like Chris S I work in three language pairs, but some clients regard them all as one...
After a week of Norwegian I am really enjoying getting back to Danish!

For quite a few years I had the luxury of specialising in a single language pair, and mostly working in one technical field in that pair (legal translation from Turkish to English), but demand seems to have collapsed for that sort of work and I have been trying to resurrect my second language pair for the past couple of years. | | | |

80% of my work is EN > PT-BR; the remaining 20% PT > EN-US.
A recent client has got me into a "new" pair: Franglish (aka Franglais) into PT-BR.
Though source is stated as English, I must work EN > FR > PT.
FR is my L5, and I don't translate it.
However if I skip the FR step, it becomes meaningless. | | | |
I go only one way, darlings - Japanese to English.
Though I am hoping one day that the Osaka dialect will be officially recognized as a completely different language - people up in Tokyo have difficulty understanding what we say here in my neck of the woods.  | | |

But it's really just one nowadays. I only did one French translation last year (or 2012, not sure) and that was a collaboration with a bilingual French colleague.
However, the other day one client sent me a Spanish documento to translate that included about half a dozen phrases in Portuguese (not one of my languages) which I went ahead and translated anyway, using Google translate and my prior knowledge of the context/content and the similarity between these Iberian cousins.
